Description
A deliciously romantic comfort dish with tender chicken in a creamy broth and flavorful ramen noodles, perfect for cozy evenings or impressing someone special.
Ingredients
- 2 tbsp olive oil
- 2 chicken breasts
- 50g all-purpose flour
- 3 garlic cloves, minced
- 8 sun-dried tomatoes, sliced
- 1/2 tbsp smoked paprika
- 1/2 tbsp oregano
- 1/2 tbsp chili flakes
- 600ml chicken stock
- 300ml single cream
- 2 tbsp grated parmesan (plus extra for garnish)
- 1/2 tsp ground pepper
- 1/2 tsp flaky salt
- 1/2 tsp sugar
- 200g ramen noodles
- Fresh coriander, beansprouts, edamame beans, spring onion, and chili oil for garnish
Instructions
- Coat the chicken breasts in the flour on a plate.
- Heat 2 tbsp of olive oil in a saucepan over medium heat.
- Add the chicken breasts and sauté for about 4 minutes on each side until golden. Remove and set aside.
- In the same pan, toss in the minced garlic, sun-dried tomatoes, smoked paprika, chili flakes, and oregano. Stir-fry for 2 minutes until fragrant.
- Mix in 300ml of chicken stock and the single cream, allowing the mixture to combine. Grate in the parmesan cheese.
- Return the chicken to the pan, cover, and simmer for 5 minutes.
- Take the chicken out once more and slice it.
- Season the broth with salt, pepper, and 1/2 tsp of sugar. Taste and adjust if necessary.
- Pour in another 300ml of chicken stock, then add the ramen noodles, cooking according to package instructions, stirring occasionally.
- Using a ladle, serve the broth and noodles into bowls, then top with sliced chicken, coriander, beansprouts, spring onions, edamame beans, and a drizzle of chili oil.
Notes
Store leftovers in an airtight container in the fridge for up to 3 days. Reheat gently with a splash of water or stock. For longer storage, freeze for up to a month.
