A refreshing salad combining pasta, spinach, mandarin oranges, and teriyaki dressing, perfect for warm evenings and gatherings.
Ingredients
- 8 oz pasta (rotini or bowties)
- 4 cups fresh spinach
- 1 can mandarin oranges, drained
- 1/4 cup sliced almonds
- 1/2 cup teriyaki sauce
- 2 tbsp olive oil
- 1 tbsp rice vinegar
- Salt to taste
- Pepper to taste
Instructions
- Begin by cooking the pasta according to the package instructions. Once done, drain it and rinse with cold water.
- In a large mixing bowl, combine the cooked pasta, fresh spinach, drained mandarin oranges, and sliced almonds.
- In a separate small bowl, whisk together the teriyaki sauce, olive oil, rice vinegar, and a pinch of salt and pepper.
- Drizzle the dressing over the salad and gently toss to ensure everything is coated evenly.
- Serve immediately for the freshest taste, or chill the salad in the refrigerator for about 30 minutes for melded flavors.
Notes
Best served fresh, but can be stored in the refrigerator for 2-3 days. Add a splash of teriyaki sauce before serving leftovers.
