A comforting and flavorful low carb taco casserole that’s quick to prepare and kid-approved.
Ingredients
- 1 lb ground beef
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 can (15 oz) diced tomatoes
- 1 can (4 oz) diced green chilies
- 2 cups cauliflower rice
- 1 cup shredded cheddar cheese
- 1 tablespoon taco seasoning
- Salt and pepper to taste
- Optional toppings: sour cream, avocado, cilantro
Instructions
- Preheat your oven to 350°F (175°C).
- In a skillet, brown the ground beef over medium heat with the chopped onion and minced garlic until the meat is fully cooked. Be sure to drain any excess fat.
- Stir in the diced tomatoes, green chilies, cauliflower rice, taco seasoning, salt, and pepper. Let everything cook together for about 5 minutes until well combined and heated through.
- Pour the mixture into a greased 9×13 inch baking dish.
- Sprinkle the top with shredded cheddar cheese.
- Bake in the preheated oven for 20-25 minutes until the cheese is melted and bubbly.
- Serve this delicious casserole warm, with optional toppings if desired.
Notes
For a spicier kick, add jalapeños or a dash of hot sauce to the filling.
