Description

A restaurant-quality Parmesan crusted chicken that combines tender grilled chicken with a crispy Parmesan-panko topping, perfect for any occasion.


Ingredients

  • 2 boneless, skinless chicken breasts (cut in half lengthwise for 4 portions)
  • 6 tablespoons unsalted butter, melted and divided
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ½ teaspoon salt (adjust to taste)
  • ½ teaspoon black pepper (adjust to taste)
  • ¾ cup grated Parmesan cheese, divided
  • ½ cup shredded provolone cheese
  • ½ cup panko breadcrumbs


Instructions

  1. Preheat your grill pan over medium-high heat. In a small bowl, combine 4 tablespoons of melted butter with garlic powder, onion powder, salt, and pepper. Brush this mixture generously over both sides of each chicken breast.
  2. Place the chicken on the hot grill pan and cook for 3-4 minutes without moving it. Flip the chicken breasts over.
  3. While the chicken cooks, mix together ½ cup Parmesan and the provolone cheese in a medium bowl. Top each chicken breast with this cheese mixture and continue cooking for another 3-4 minutes until the internal temperature reaches 165°F.
  4. Remove the chicken from the grill pan and transfer to a foil-lined baking sheet. Preheat your oven’s broiler on high.
  5. In a separate bowl, combine the panko breadcrumbs with the remaining ¼ cup Parmesan and 2 tablespoons melted butter. Sprinkle this mixture evenly over each chicken breast.
  6. Place the baking sheet under the broiler for 1-2 minutes, watching carefully to prevent burning. Let the chicken rest for 5 minutes before serving.

Notes

Store leftovers in an airtight container for up to 3 days. Reheat in the oven or air fryer for best results.
