Description

A creamy and hearty loaded potato soup featuring potatoes, bacon, and cheese, perfect for chilly evenings.


Ingredients

  • 4 large potatoes, peeled and diced
  • 1 cup chopped onion
  • 1 cup cooked bacon, crumbled
  • 1 cup shredded cheddar cheese
  • 4 cups chicken broth
  • 1 cup heavy cream
  • Salt and pepper to taste
  • Chives for garnish (optional)


Instructions

  1. In a large pot, heat a bit of oil over medium heat and cook the chopped onion until it becomes translucent.
  2. Add the diced potatoes along with the chicken broth, bringing the mixture to a boil.
  3. Once boiling, reduce heat and allow it to simmer until the potatoes are fork-tender, about 15 minutes.
  4. Mash some of the potatoes in the pot to achieve a thicker texture.
  5. Stir in the heavy cream, crumbled bacon, and shredded cheese until everything is melted and well combined.
  6. Season the soup with salt and pepper to taste.
  7. Serve hot, garnished with fresh chives.

Notes

Feel free to substitute the heavy cream with whole milk for a lighter version or swap bacon with sautéed mushrooms for a vegetarian twist.
