Ingredients
- 4 large potatoes, peeled and diced
- 1 cup chopped onion
- 1 cup cooked bacon, crumbled
- 1 cup shredded cheddar cheese
- 4 cups chicken broth
- 1 cup heavy cream
- Salt and pepper to taste
- Chives for garnish (optional)
Instructions
- In a large pot, heat a bit of oil over medium heat and cook the chopped onion until it becomes translucent.
- Add the diced potatoes along with the chicken broth, bringing the mixture to a boil.
- Once boiling, reduce heat and allow it to simmer until the potatoes are fork-tender, about 15 minutes.
- Mash some of the potatoes in the pot to achieve a thicker texture.
- Stir in the heavy cream, crumbled bacon, and shredded cheese until everything is melted and well combined.
- Season the soup with salt and pepper to taste.
- Serve hot, garnished with fresh chives.
Notes
Feel free to substitute the heavy cream with whole milk for a lighter version or swap bacon with sautéed mushrooms for a vegetarian twist.
