Ingredients
- 1/2 cup fresh lemon juice (from about 3 lemons)
- 1/3 to 1/2 cup honey or organic cane sugar (adjust based on desired sweetness)
- 1 1/2 cups lukewarm water
- 1 tablespoon lemon zest (grated zest of 1 lemon)
Instructions
- Whisk together the fresh lemon juice, chosen sweetener, lukewarm water, and lemon zest until fully dissolved.
- Carefully pour the mixture into popsicle molds, leaving space for expansion.
- Insert sticks and place the molds in the freezer.
- Allow the popsicles to freeze for at least 240-360 minutes, ideally overnight.
