Description
A bright and zesty lemon pie topped with fluffy meringue, perfect for any gathering or sweet craving.
Ingredients
- 1 pie crust
- 1 cup sugar
- 2 tablespoons cornstarch
- 1/4 teaspoon salt
- 1 1/2 cups water
- 3 egg yolks, beaten
- 2 tablespoons butter
- 1/2 cup lemon juice (freshly squeezed)
- 1 tablespoon lemon zest
- 3 egg whites
- 1/4 teaspoon cream of tartar
Instructions
- Preheat your oven to 350°F (175°C).
- Fit the pie crust into a pie plate and bake it according to package instructions until golden brown.
- Combine sugar, cornstarch, and salt in a saucepan. Gradually add in the water and stir over medium heat until thickened.
- Stir a small amount of the hot mixture into the beaten egg yolks, then return this mixture to the saucepan.
- Cook until boiling, then remove from heat. Stir in the butter, lemon juice, and lemon zest.
- Pour the filling into the baked pie crust.
- Beat egg whites with cream of tartar until soft peaks form. Gradually add sugar and beat until stiff peaks form.
- Spread the meringue over the lemon filling, sealing it to the edges of the crust.
- Bake for 10-12 minutes or until the meringue is golden.
- Allow to cool before serving.
Notes
Serve chilled, optionally garnish with whipped cream or fresh berries for added flavor.
