Description

A bright and zesty lemon pie topped with fluffy meringue, perfect for any gathering or sweet craving.


Ingredients

  • 1 pie crust
  • 1 cup sugar
  • 2 tablespoons cornstarch
  • 1/4 teaspoon salt
  • 1 1/2 cups water
  • 3 egg yolks, beaten
  • 2 tablespoons butter
  • 1/2 cup lemon juice (freshly squeezed)
  • 1 tablespoon lemon zest
  • 3 egg whites
  • 1/4 teaspoon cream of tartar


Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Fit the pie crust into a pie plate and bake it according to package instructions until golden brown.
  3. Combine sugar, cornstarch, and salt in a saucepan. Gradually add in the water and stir over medium heat until thickened.
  4. Stir a small amount of the hot mixture into the beaten egg yolks, then return this mixture to the saucepan.
  5. Cook until boiling, then remove from heat. Stir in the butter, lemon juice, and lemon zest.
  6. Pour the filling into the baked pie crust.
  7. Beat egg whites with cream of tartar until soft peaks form. Gradually add sugar and beat until stiff peaks form.
  8. Spread the meringue over the lemon filling, sealing it to the edges of the crust.
  9. Bake for 10-12 minutes or until the meringue is golden.
  10. Allow to cool before serving.

Notes

Serve chilled, optionally garnish with whipped cream or fresh berries for added flavor.
