Ingredients
- 1 bunch fresh asparagus (trimmed)
- 2 tablespoons olive oil
- 1 teaspoon lemon zest
- 1 tablespoon lemon juice
- 1 teaspoon black pepper
- ½ teaspoon sea salt
- Grated Parmesan cheese for serving (optional)
Instructions
- Preheat your oven to 400°F (200°C).
- In a large bowl, mix together the olive oil, lemon zest, lemon juice, black pepper, and sea salt.
- Add the trimmed asparagus to the bowl and gently toss until every spear is coated.
- Spread the asparagus in a single layer on a baking sheet for even roasting.
- Roast in the preheated oven for 15-20 minutes, until the asparagus is tender and has a slight crisp.
- Remove from the oven and allow to cool for a minute.
- If desired, sprinkle with grated Parmesan cheese before serving.
- Serve warm as a delightful side dish or appetizer.
Notes
Try green beans as a substitute for asparagus. For added flavor, toss in minced garlic or red pepper flakes.
