Description

Ingredients

  • 1 bunch fresh asparagus (trimmed)
  • 2 tablespoons olive oil
  • 1 teaspoon lemon zest
  • 1 tablespoon lemon juice
  • 1 teaspoon black pepper
  • ½ teaspoon sea salt
  • Grated Parmesan cheese for serving (optional)


Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, mix together the olive oil, lemon zest, lemon juice, black pepper, and sea salt.
  3. Add the trimmed asparagus to the bowl and gently toss until every spear is coated.
  4. Spread the asparagus in a single layer on a baking sheet for even roasting.
  5. Roast in the preheated oven for 15-20 minutes, until the asparagus is tender and has a slight crisp.
  6. Remove from the oven and allow to cool for a minute.
  7. If desired, sprinkle with grated Parmesan cheese before serving.
  8. Serve warm as a delightful side dish or appetizer.

Notes

Try green beans as a substitute for asparagus. For added flavor, toss in minced garlic or red pepper flakes.
