Description

A vibrant and delicious pasta salad that combines grilled chicken, fresh mozzarella, tomatoes, and basil for a delightful summer dish.


Ingredients

  • 8 oz pasta (fusilli or rotini)
  • 2 grilled chicken breasts, sliced
  • 1 cup cherry tomatoes, halved
  • 1 cup fresh mozzarella balls, halved
  • 1 cup fresh basil leaves
  • 1/4 cup balsamic glaze
  • 2 tablespoons olive oil
  • Salt and pepper, to taste


Instructions

  1. Cook the pasta: Boil water in a large pot, add salt, and cook the pasta according to package instructions. Drain and let cool.
  2. Grill the chicken: Season chicken breasts with salt and pepper. Grill over medium heat for about 6-7 minutes on each side or until fully cooked. Let it rest before slicing.
  3. Prepare the ingredients: Slice the mozzarella and cherry tomatoes, and wash the basil leaves.
  4. Layer everything: In a large serving bowl, start with a layer of pasta, followed by grilled chicken, tomatoes, mozzarella, and basil. Repeat the layering until all ingredients are used.
  5. Add the finishing touches: Drizzle with balsamic glaze and olive oil, season with salt and pepper, and gently toss to combine.
