Description

A vibrant and tropical frozen treat that combines pineapple, mango, strawberries, and creamy coconut milk, perfect for cooling down on hot days.


Ingredients

  • 1 1/2 cups cubed pineapple
  • 1 cup diced mango
  • 1/2 cup coconut milk (full-fat canned for creaminess)
  • 2 1/2 cups strawberries
  • 1/4 cup orange juice
  • 1 Tablespoon honey or agave (optional, to taste)


Instructions

  1. Add the pineapple, mango, and coconut milk to a blender. Puree until smooth, adding more coconut milk if necessary. Taste and blend in honey or agave if desired. Pour this mixture into a measuring cup and set it aside.
  2. Blend the strawberries, orange juice, and honey or agave in the blender until completely smooth. Adjust sweetness if needed.
  3. Alternate scoops of the pineapple mixture and the strawberry mixture into popsicle molds. Use a spoon or a funnel to keep the layers distinct.
  4. Insert popsicle sticks and freeze for at least 180-240 minutes. When ready to enjoy, run the molds under cool water for a few seconds, then gently wiggle to release the popsicles.

Notes

For a creamier texture, always opt for full-fat coconut milk. To prevent the layers from mixing, pour slowly and use a funnel for precision.
