Description
This Korean rolled omelette, or Gyeran-mari, is a delightful blend of flavors and textures, perfect for a quick breakfast or an impressive brunch.
Ingredients
- 5 medium eggs
- 1 green onion (chopped)
- 2 tbsp carrot (chopped or grated)
- 1/4 tsp salt
- 1/8 tsp black or white pepper
- 1 tsp neutral oil (such as vegetable or canola)
Instructions
- Whisk the eggs together in a bowl with salt and pepper until well combined.
- Stir in the chopped green onion and carrot, and mix again.
- Heat a 10-inch non-stick pan over low heat and add the neutral oil.
- Pour in one-third of the egg mixture, spreading it evenly around the pan.
- Lift the edges gently with a spatula, allowing the uncooked egg to flow underneath as the edges set.
- When the top is almost set but still slightly runny, start rolling the omelette from one end to the other.
- Once rolled, slide the omelette to the opposite side of the pan, add the next third of egg mixture, tilting the pan to fill in any gaps.
- Repeat the rolling process until all the mixture is cooked.
- Allow the omelette to rest on a cool surface for a couple of minutes before slicing it into 6-8 pieces.
Notes
This dish can be customized with your favorite veggies or proteins. Serve warm or cold with soy sauce for dipping.
