Description

This Korean rolled omelette, or Gyeran-mari, is a delightful blend of flavors and textures, perfect for a quick breakfast or an impressive brunch.


Ingredients

  • 5 medium eggs
  • 1 green onion (chopped)
  • 2 tbsp carrot (chopped or grated)
  • 1/4 tsp salt
  • 1/8 tsp black or white pepper
  • 1 tsp neutral oil (such as vegetable or canola)


Instructions

  1. Whisk the eggs together in a bowl with salt and pepper until well combined.
  2. Stir in the chopped green onion and carrot, and mix again.
  3. Heat a 10-inch non-stick pan over low heat and add the neutral oil.
  4. Pour in one-third of the egg mixture, spreading it evenly around the pan.
  5. Lift the edges gently with a spatula, allowing the uncooked egg to flow underneath as the edges set.
  6. When the top is almost set but still slightly runny, start rolling the omelette from one end to the other.
  7. Once rolled, slide the omelette to the opposite side of the pan, add the next third of egg mixture, tilting the pan to fill in any gaps.
  8. Repeat the rolling process until all the mixture is cooked.
  9. Allow the omelette to rest on a cool surface for a couple of minutes before slicing it into 6-8 pieces.

Notes

This dish can be customized with your favorite veggies or proteins. Serve warm or cold with soy sauce for dipping.
