Description

A comforting low-carb meatball casserole featuring juicy meatballs, marinara, ricotta, and a gooey mozzarella-parmesan topping.


Ingredients

  • 2 lb ground beef
  • 1 egg
  • 1/2 cup grated parmesan
  • 3/4 cup shredded mozzarella
  • 1/4 cup grated onion
  • 3 garlic cloves, minced
  • 3 Tbsp chopped parsley
  • 1/2 tsp onion powder
  • 1/2 tsp garlic powder
  • 1/2 tsp Italian seasoning
  • Salt and pepper to taste
  • 3 cups marinara
  • 1/2 cup ricotta
  • 1/2 cup shredded mozzarella
  • 23 Tbsp chopped fresh basil


Instructions

  1. Preheat the oven to 400°F (205°C).
  2. In a large bowl, combine ground beef, parmesan, mozzarella, egg, grated onion, garlic, parsley, and seasonings. Mix until combined.
  3. Scoop and roll into 15–16 large meatballs.
  4. Place on a parchment-lined baking sheet or in a baking dish and bake for 20–25 minutes until cooked through.
  5. If needed, carefully pour off excess grease.
  6. Move meatballs into a greased casserole dish. Spoon marinara over them. Add dollops of ricotta, then sprinkle mozzarella on top.
  7. Return to the oven and bake for another 15–20 minutes until cheese is melted and bubbly.
  8. Top with fresh basil and serve.

Notes

Don’t overmix the meatball mixture to ensure tenderness. Choose marinara wisely for lower sugar content.
