This Keto Cauliflower Broccoli Ham Salad blends fresh veggies with hearty diced ham and a creamy dressing for a light, nutritious dish perfect for summer barbecues or quick lunches.
Ingredients
- 5 cups cauliflower florets
- 3 cups broccoli florets
- 1 cup cooked ham, diced
- ½ cup mayonnaise
- 2 tablespoons apple cider vinegar
- 1 tablespoon Dijon mustard
- Salt and pepper, to taste
- Optional toppings: Chopped green onions or shredded cheese
Instructions
- Chop the veggies: Fresh cauliflower and broccoli are the stars.
- Steam them lightly for about 3-4 minutes until they’re tender but still crisp. Drain and let cool.
- Whisk together mayonnaise, apple cider vinegar, Dijon mustard, salt, and pepper in a large mixing bowl.
- Add the cooled veggies and ham to the bowl.
- Mix gently to combine all ingredients thoroughly.
- Chill in the refrigerator for 30 minutes.
- Serve cold, garnished with green onions or cheese if desired.
Notes
Store leftovers in an airtight container in the fridge for up to 3 days. Freezing is not recommended due to mayonnaise.
