Description

This Keto Cauliflower Broccoli Ham Salad blends fresh veggies with hearty diced ham and a creamy dressing for a light, nutritious dish perfect for summer barbecues or quick lunches.


Ingredients

  • 5 cups cauliflower florets
  • 3 cups broccoli florets
  • 1 cup cooked ham, diced
  • ½ cup mayonnaise
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon Dijon mustard
  • Salt and pepper, to taste
  • Optional toppings: Chopped green onions or shredded cheese


Instructions

  1. Chop the veggies: Fresh cauliflower and broccoli are the stars.
  2. Steam them lightly for about 3-4 minutes until they’re tender but still crisp. Drain and let cool.
  3. Whisk together mayonnaise, apple cider vinegar, Dijon mustard, salt, and pepper in a large mixing bowl.
  4. Add the cooled veggies and ham to the bowl.
  5. Mix gently to combine all ingredients thoroughly.
  6. Chill in the refrigerator for 30 minutes.
  7. Serve cold, garnished with green onions or cheese if desired.

Notes

Store leftovers in an airtight container in the fridge for up to 3 days. Freezing is not recommended due to mayonnaise.
