Description

A vibrant and refreshing pasta salad combining sweet corn, fresh vegetables, and zesty lime dressing, perfect for summer gatherings.


Ingredients

  • 8 ounces pasta (your choice)
  • 2 cups corn (fresh, canned, or frozen)
  • 1 red bell pepper, diced
  • 1/2 red onion, diced
  • 1 cup cherry tomatoes, halved
  • 1/2 cup cilantro, chopped
  • 1 lime, juiced
  • 1/4 cup olive oil
  • Salt and pepper to taste


Instructions

  1. Cook the pasta according to the package instructions. Once done, drain and allow it to cool.
  2. Combine the cooled pasta, corn, diced red bell pepper, diced red onion, halved cherry tomatoes, and chopped cilantro in a large bowl.
  3. Make the dressing by whisking together the lime juice, olive oil, salt, and pepper in a small bowl.
  4. Toss the dressing over the pasta salad and gently mix until everything is coated evenly.
  5. Chill the salad in the refrigerator for at least 30 minutes for optimal flavor.

Notes
