Ingredients
- 8 ounces pasta (your choice)
- 2 cups corn (fresh, canned, or frozen)
- 1 red bell pepper, diced
- 1/2 red onion, diced
- 1 cup cherry tomatoes, halved
- 1/2 cup cilantro, chopped
- 1 lime, juiced
- 1/4 cup olive oil
- Salt and pepper to taste
Instructions
- Cook the pasta according to the package instructions. Once done, drain and allow it to cool.
- Combine the cooled pasta, corn, diced red bell pepper, diced red onion, halved cherry tomatoes, and chopped cilantro in a large bowl.
- Make the dressing by whisking together the lime juice, olive oil, salt, and pepper in a small bowl.
- Toss the dressing over the pasta salad and gently mix until everything is coated evenly.
- Chill the salad in the refrigerator for at least 30 minutes for optimal flavor.
Notes
For a quick meal, add canned black beans or shredded rotisserie chicken for extra protein. A sprinkle of feta cheese or avocado slices can enhance the dish.
