Ingredients
- 8 oz cheese tortellini
- 2 cups cherry tomatoes, halved
- 1 cup cucumber, diced
- 1/2 cup red onion, diced
- 1/2 cup black olives, sliced
- 1/2 cup bell pepper, diced
- 1/2 cup shredded mozzarella cheese
- 1/2 cup Italian dressing
- Salt and pepper to taste
- Fresh basil for garnish (optional)
Instructions
- Cook the cheese tortellini according to the package instructions. Drain and let it cool.
- In a large mixing bowl, add the cooled tortellini, cherry tomatoes, cucumber, red onion, black olives, bell pepper, and mozzarella cheese.
- Drizzle the Italian dressing over the salad mixture and gently toss until everything is well combined.
- Season with salt and pepper to taste.
- Chill the salad in the refrigerator for at least 15 minutes to allow the flavors to meld.
- Before serving, garnish with fresh basil if desired.
