A comforting slow cooker casserole that’s easy to prepare and perfect for busy weeknights or family gatherings.
Ingredients
- 1 pound ground beef (or turkey for a lighter option)
- 1 can (15 oz) black beans, drained
- 1 cup corn, frozen or canned
- 1 can (10 oz) diced tomatoes with green chiles
- 1 cup rice, uncooked (white or brown)
- 2 cups chicken or vegetable broth
- 1 cup shredded cheese (cheddar, Monterey Jack, or your choice)
- 1 tablespoon taco seasoning (or your preferred spices)
- Salt and pepper to taste
Instructions
- In a large skillet over medium heat, brown the ground beef. Drain any excess fat.
- In your slow cooker, combine the cooked beef, black beans, corn, diced tomatoes, rice, and taco seasoning.
- Pour the broth over the mixture, stirring gently to ensure everything is well-combined.
- Cover and cook on low for 6-8 hours, or on high for 3-4 hours.
- About 15 minutes before serving, stir in the shredded cheese until it’s melted and bubbly.
- Serve warm and enjoy!
Notes
Top with fresh cilantro, avocado, or sour cream for extra flavor. Can be served with a garden salad or garlic bread.
