Description

A comforting slow cooker casserole that’s easy to prepare and perfect for busy weeknights or family gatherings.


Ingredients

  • 1 pound ground beef (or turkey for a lighter option)
  • 1 can (15 oz) black beans, drained
  • 1 cup corn, frozen or canned
  • 1 can (10 oz) diced tomatoes with green chiles
  • 1 cup rice, uncooked (white or brown)
  • 2 cups chicken or vegetable broth
  • 1 cup shredded cheese (cheddar, Monterey Jack, or your choice)
  • 1 tablespoon taco seasoning (or your preferred spices)
  • Salt and pepper to taste


Instructions

  1. In a large skillet over medium heat, brown the ground beef. Drain any excess fat.
  2. In your slow cooker, combine the cooked beef, black beans, corn, diced tomatoes, rice, and taco seasoning.
  3. Pour the broth over the mixture, stirring gently to ensure everything is well-combined.
  4. Cover and cook on low for 6-8 hours, or on high for 3-4 hours.
  5. About 15 minutes before serving, stir in the shredded cheese until it’s melted and bubbly.
  6. Serve warm and enjoy!

Notes

Top with fresh cilantro, avocado, or sour cream for extra flavor. Can be served with a garden salad or garlic bread.
