Description

A fast, flavor-packed cod dish that’s quick to prepare and bursting with lemon and garlic goodness.


Ingredients

  • 4 cod fillets (about 5 oz each)
  • 3 tablespoons unsalted butter
  • 1 tablespoon olive oil
  • 3 garlic cloves, minced
  • 2 tablespoons fresh lemon juice
  • 1 teaspoon lemon zest
  • Salt and pepper, to taste
  • 2 tablespoons chopped fresh parsley


Instructions

  1. Pat the cod fillets dry using paper towels and season both sides with salt and pepper.
  2. Heat olive oil in a skillet over medium-high heat. Sear the cod for 2–3 minutes on each side until golden brown and cooked through. Remove the cod from the pan and set it aside.
  3. Lower the heat to medium. In the same pan, melt the butter. Add in the minced garlic and sauté for about 30 seconds until fragrant.
  4. Stir in the lemon juice and zest. Allow the mixture to simmer for one minute to combine the flavors.
  5. Return the cod fillets to the pan. Spoon the garlic butter sauce over the fillets and cook for an additional 2–3 minutes.
  6. Garnish with chopped parsley and serve immediately.

Notes

Serve over rice or quinoa, or with a side of steamed vegetables and salad.
