Description
A fast, flavor-packed cod dish that’s quick to prepare and bursting with lemon and garlic goodness.
Ingredients
- 4 cod fillets (about 5 oz each)
- 3 tablespoons unsalted butter
- 1 tablespoon olive oil
- 3 garlic cloves, minced
- 2 tablespoons fresh lemon juice
- 1 teaspoon lemon zest
- Salt and pepper, to taste
- 2 tablespoons chopped fresh parsley
Instructions
- Pat the cod fillets dry using paper towels and season both sides with salt and pepper.
- Heat olive oil in a skillet over medium-high heat. Sear the cod for 2–3 minutes on each side until golden brown and cooked through. Remove the cod from the pan and set it aside.
- Lower the heat to medium. In the same pan, melt the butter. Add in the minced garlic and sauté for about 30 seconds until fragrant.
- Stir in the lemon juice and zest. Allow the mixture to simmer for one minute to combine the flavors.
- Return the cod fillets to the pan. Spoon the garlic butter sauce over the fillets and cook for an additional 2–3 minutes.
- Garnish with chopped parsley and serve immediately.
Notes
Serve over rice or quinoa, or with a side of steamed vegetables and salad.
