Description

These Indulgent Brownie Cookies bring together the rich, fudgy texture of brownies in a delightful cookie form, perfect for any occasion.


Ingredients

  • 6 tbsp Unsalted Butter
  • 8 oz Dark Chocolate, chopped
  • 1/2 cup White Granulated Sugar
  • 1/4 cup Light Brown Sugar, packed
  • 2 Eggs, room temperature
  • 1 tsp Vanilla Extract
  • 1/2 cup All-Purpose Flour
  • 1/4 cup Dutch-Process Cocoa Powder
  • 1 tsp Baking Powder
  • 1/4 tsp Salt
  • Flaky Sea Salt, for topping


Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a saucepan, melt the unsalted butter and dark chocolate together over low heat, stirring until smooth.
  3. In a large mixing bowl, whisk together white granulated sugar and light brown sugar with the melted chocolate mixture.
  4. Mix in the eggs one at a time, followed by the vanilla extract, blending well after each addition.
  5. In another bowl, combine the all-purpose flour, Dutch-process cocoa powder, baking powder, and salt.
  6. Gradually add the dry ingredients to the wet mixture, stirring until just combined.
  7. Drop tablespoonfuls of dough onto the prepared baking sheet, leaving enough space for spreading.
  8. Bake for 10-12 minutes, or until the tops are crackly.
  9. Remove from the oven and immediately sprinkle a little flaky sea salt on top. Allow them to cool for a few minutes before transferring to a wire rack.

Notes
