Ingredients
- 1 lb carrots, peeled and cut into sticks
- 2 tablespoons honey
- 1 tablespoon olive oil
- 1 tablespoon butter
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 tablespoons fresh parsley, chopped
- 1 tablespoon fresh dill, chopped
- 1 teaspoon lemon zest
Instructions
- Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
- In a large bowl, mix together the carrots, honey, olive oil, butter, salt, and pepper until evenly coated.
- Spread the carrots in a single layer on the prepared baking sheet and roast in the oven for 25-30 minutes until tender and slightly caramelized.
- Remove from the oven and sprinkle with fresh parsley, dill, and lemon zest. Toss gently to combine.

Notes
