Description

Ingredients

  • 1 lb carrots, peeled and cut into sticks
  • 2 tablespoons honey
  • 1 tablespoon olive oil
  • 1 tablespoon butter
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons fresh parsley, chopped
  • 1 tablespoon fresh dill, chopped
  • 1 teaspoon lemon zest


Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a large bowl, mix together the carrots, honey, olive oil, butter, salt, and pepper until evenly coated.
  3. Spread the carrots in a single layer on the prepared baking sheet and roast in the oven for 25-30 minutes until tender and slightly caramelized.
  4. Remove from the oven and sprinkle with fresh parsley, dill, and lemon zest. Toss gently to combine.
