Ingredients
- 2 lbs carrots (peeled and sliced diagonally about 1/2 inch thick)
- 1 tbsp olive oil (extra virgin)
- 1 tbsp butter (melted)
- 2 tbsp honey
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tbsp freshly chopped parsley (for garnish)
Instructions
- Peel and slice the carrots diagonally into pieces about 1/2 inch thick.
- In a large skillet, heat the olive oil over medium heat.
- Add the sliced carrots to the skillet and sauté for about 5-7 minutes until tender but still slightly crunchy.
- In a small bowl, whisk together the melted butter, honey, salt, and black pepper.
- Pour the honey glaze over the sautéed carrots in the skillet and stir well to coat evenly.
- Continue cooking for an additional 3-5 minutes, stirring occasionally until the glaze thickens and caramelizes slightly.
- Remove from heat, sprinkle with freshly chopped parsley, and serve warm.

For a vegan option, substitute honey with maple syrup.
