Description

Ingredients

  • 2 lbs carrots (peeled and sliced diagonally about 1/2 inch thick)
  • 1 tbsp olive oil (extra virgin)
  • 1 tbsp butter (melted)
  • 2 tbsp honey
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tbsp freshly chopped parsley (for garnish)


Instructions

  1. Peel and slice the carrots diagonally into pieces about 1/2 inch thick.
  2. In a large skillet, heat the olive oil over medium heat.
  3. Add the sliced carrots to the skillet and sauté for about 5-7 minutes until tender but still slightly crunchy.
  4. In a small bowl, whisk together the melted butter, honey, salt, and black pepper.
  5. Pour the honey glaze over the sautéed carrots in the skillet and stir well to coat evenly.
  6. Continue cooking for an additional 3-5 minutes, stirring occasionally until the glaze thickens and caramelizes slightly.
  7. Remove from heat, sprinkle with freshly chopped parsley, and serve warm.

Notes

For a vegan option, substitute honey with maple syrup.
