Description

A delightful side dish featuring carrots caramelized in butter and honey, infused with fresh thyme.


Ingredients

  • 2 pounds carrots, peeled and cut into 2-inch pieces
  • 3 tablespoons unsalted butter
  • 3 tablespoons honey
  • 2 tablespoons water
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon fresh thyme leaves


Instructions

  1. In a large skillet, melt the butter over medium heat, cooking for 3-4 minutes until golden brown and nutty.
  2. Add carrots, water, and salt, stirring to coat the carrots evenly.
  3. Cover the skillet, cooking for about 8 minutes until the carrots are fork-tender but still slightly crunchy.
  4. Remove the cover and cook for an additional 2-3 minutes until water evaporates.
  5. Drizzle honey over the carrots and toss for 1-2 minutes until glossy.
  6. Season with black pepper and top with fresh thyme. Serve immediately.

Notes

For a different flavor, substitute maple syrup for honey.
