Ingredients
- 1 lb Carrots
- 3 tbsp Honey
- 2 tbsp Butter
- 2 tbsp Olive oil
- 2 cloves Garlic, minced
- 1 tsp Thyme
- 1/2 tsp Salt
- 1/4 tsp Pepper
Instructions
- Preheat your oven to 400°F (200°C).
- Peel the carrots and cut them into even-sized pieces.
- In a bowl, toss the carrots with olive oil, salt, and pepper.
- Spread the carrots evenly on a baking sheet and roast for 20-25 minutes, stirring halfway through for even cooking.
- While the carrots are roasting, melt butter in a saucepan over medium heat.
- Add minced garlic to the butter and cook until fragrant, about 1-2 minutes.
- Stir in honey and thyme, cooking for another 2-3 minutes until well combined.
- Once the carrots are roasted, remove them from the oven and drizzle the honey glaze over the top, tossing to coat evenly.

Notes
