Description

Ingredients

  • 1 lb Carrots
  • 3 tbsp Honey
  • 2 tbsp Butter
  • 2 tbsp Olive oil
  • 2 cloves Garlic, minced
  • 1 tsp Thyme
  • 1/2 tsp Salt
  • 1/4 tsp Pepper


Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Peel the carrots and cut them into even-sized pieces.
  3. In a bowl, toss the carrots with olive oil, salt, and pepper.
  4. Spread the carrots evenly on a baking sheet and roast for 20-25 minutes, stirring halfway through for even cooking.
  5. While the carrots are roasting, melt butter in a saucepan over medium heat.
  6. Add minced garlic to the butter and cook until fragrant, about 1-2 minutes.
  7. Stir in honey and thyme, cooking for another 2-3 minutes until well combined.
  8. Once the carrots are roasted, remove them from the oven and drizzle the honey glaze over the top, tossing to coat evenly.
