Description

Deliciously sweet and savory roasted carrots coated in a honey garlic butter glaze, perfect for any occasion.


Ingredients

  • 2 lbs carrots, peeled and cut into 1-inch pieces
  • 3 tablespoons olive oil
  • 3 tablespoons butter, melted
  • 3 tablespoons honey
  • 2 cloves garlic, minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Optional: 1/4 cup grated Parmesan cheese for topping


Instructions

  1. Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper.
  2. In a large bowl, add the cut carrots.
  3. In a separate small bowl, whisk together the olive oil, melted butter, honey, minced garlic, salt, and pepper until well combined.
  4. Pour this glaze over the carrots and toss until fully coated.
  5. Spread the carrots in a single layer on the baking sheet, avoiding overcrowding.
  6. Roast in the oven for 20 to 25 minutes, tossing halfway through, until tender and caramelized.
  7. If desired, sprinkle with Parmesan cheese and return to the oven for an additional 2 minutes until it melts slightly.
