A delightful combination of sweet honey and savory garlic envelops tender baby carrots, making them a perfect side dish for any occasion.

Ingredients

  • 2 pounds baby carrots
  • 1/2 cup butter
  • 1/4 cup honey
  • 4 garlic cloves, minced (or 2 teaspoons garlic powder)
  • 1/2 teaspoon salt
  • Cracked black pepper, to taste
  • 2 tablespoons fresh chopped parsley for garnish

Instructions

  1. Preheat your oven to 425°F (220°C) and lightly grease a large baking sheet.
  2. Melt the butter in a skillet over medium heat.
  3. Pour in the honey; stir until melted and well-combined with butter.
  4. Add garlic and cook for about 30 seconds until fragrant. Stir continuously.
  5. Toss the carrots in the sauce, allowing it to thicken for about a minute.
  6. Season with salt and cracked black pepper to suit your taste.
  7. Transfer the carrots to the prepared baking sheet in a single layer.
  8. Roast for 20 minutes or until the carrots are tender when pierced with a fork.
  9. Broil for an additional 2-3 minutes on high to achieve slight crispness and char.
  10. Garnish with fresh parsley before serving.
