Description

A vibrant and tropical dish featuring grilled prawns marinated in honey chipotle, served with a refreshing mango and cucumber salsa.


Ingredients

  • 450g (1 lb) prawns (shrimp)
  • 2 tbsp honey
  • Chipotle seasoning (to taste)
  • Garlic powder (to taste)
  • Salt (to taste)
  • 1 cup mango, diced
  • 1 cup cucumber, diced
  • 1 cup capsicum (bell pepper), diced
  • 1/4 cup red onion, finely chopped
  • Fresh coriander (cilantro) leaves
  • Juice of 1 lime
  • 8 small corn or flour tortillas


Instructions

  1. Combine the prawns, honey, chipotle seasoning, garlic powder, and salt in a mixing bowl.
  2. Heat a skillet over medium-high heat. Add the prawns and cook for 2-3 minutes on each side until cooked through.
  3. Mix together the diced mango, cucumber, capsicum, red onion, coriander leaves, and lime juice in a separate bowl to create the salsa.
  4. Warm the tortillas in a pan or microwave until soft.
  5. Serve by placing cooked prawns in tortillas and topping with fresh salsa.

Notes

For added flavor, marinate the prawns for 30 minutes before cooking. Substitute prawns with chicken or tofu for different protein options.
