Description

A vibrant pasta salad featuring fresh vegetables and a tangy dressing, perfect for picnics and potlucks.


Ingredients

  • 8 oz pasta (rotini or penne)
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1 bell pepper, diced
  • 1/2 red onion, finely diced
  • 1 cup mozzarella cheese, cubed
  • 1/2 cup Italian dressing
  • 1/4 cup fresh basil, chopped
  • Salt and freshly ground black pepper, to taste


Instructions

  1. Bring a large pot of salted water to a rolling boil. Add the pasta and cook according to package instructions for al dente.
  2. Drain the pasta in a colander and rinse under cold running water.
  3. Transfer the cooled pasta to a large mixing bowl and drizzle with olive oil.
  4. Add the halved cherry tomatoes, diced cucumber, diced bell pepper, diced red onion, and cubed mozzarella to the bowl.
  5. Pour the Italian dressing over the pasta and vegetables and toss gently.
  6. Stir in the chopped basil and season with salt and pepper.
  7. Serve immediately, or refrigerate for at least 30 minutes.

Notes

For best flavor, make the salad 1–3 hours ahead. Toss fresh herbs and cheese just before serving.
