Description

Ingredients

  • 2 cups fresh strawberries, pureed
  • 1 and 1/2 cups all-purpose flour
  • 1 and 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 3 large eggs
  • 1 tsp vanilla extract
  • 1/2 cup milk
  • 8 oz cream cheese, softened
  • 1/2 cup powdered sugar
  • 1/4 cup heavy cream
  • Fresh strawberries for garnish


Instructions

  1. Preheat your oven to 350°F (175°C) and grease and flour two 9-inch round cake pans.
  2. Stir together the flour, baking powder, baking soda, and salt in a mixing bowl.
  3. Cream the softened butter and granulated sugar together until light and fluffy.
  4. Add the eggs one at a time, beating well after each addition, then mix in the vanilla and strawberry puree.
  5. Incorporate the dry ingredient mixture into the wet mixture, alternating it with milk until just combined.
  6. Pour the batter evenly into the prepared cake pans and bake for 25-30 minutes, or until a toothpick comes out clean.
  7. Cool the cakes in the pans for 10 minutes before transferring to wire racks to cool completely.
  8. Beat the cream cheese until smooth, then mix in the powdered sugar and heavy cream until fluffy for the frosting.
  9. Frost the cooled cakes with the cream cheese mixture and garnish with fresh strawberries.
