Ingredients
- 2 cups fresh strawberries, pureed
- 1 and 1/2 cups all-purpose flour
- 1 and 1/2 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1/2 cup unsalted butter, softened
- 1 cup granulated sugar
- 3 large eggs
- 1 tsp vanilla extract
- 1/2 cup milk
- 8 oz cream cheese, softened
- 1/2 cup powdered sugar
- 1/4 cup heavy cream
- Fresh strawberries for garnish
Instructions
- Preheat your oven to 350°F (175°C) and grease and flour two 9-inch round cake pans.
- Stir together the flour, baking powder, baking soda, and salt in a mixing bowl.
- Cream the softened butter and granulated sugar together until light and fluffy.
- Add the eggs one at a time, beating well after each addition, then mix in the vanilla and strawberry puree.
- Incorporate the dry ingredient mixture into the wet mixture, alternating it with milk until just combined.
- Pour the batter evenly into the prepared cake pans and bake for 25-30 minutes, or until a toothpick comes out clean.
- Cool the cakes in the pans for 10 minutes before transferring to wire racks to cool completely.
- Beat the cream cheese until smooth, then mix in the powdered sugar and heavy cream until fluffy for the frosting.
- Frost the cooled cakes with the cream cheese mixture and garnish with fresh strawberries.
