Description

A nostalgic and delicious Pineapple Upside-Down Cake with caramelized pineapples and cherries atop a moist cake.

Ingredients

  • 1/2 cup butter
  • 1 cup brown sugar
  • 1 can (20 oz) sliced pineapple, drained
  • Maraschino cherries
  • 1 1/2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup milk
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Melt the butter in a round cake pan, then stir in the brown sugar until fully combined.
  3. Arrange the pineapple slices decoratively in the melted butter and sugar, placing a cherry in the center of each pineapple ring.
  4. Whisk together flour, granulated sugar, baking powder, and salt in a mixing bowl.
  5. Combine milk, eggs, and vanilla extract in another bowl and whisk until smooth.
  6. Gradually mix the wet ingredients into the dry ingredients until just combined; avoid over-mixing.
  7. Pour the batter gently over the arranged pineapple and cherries.
  8. Bake for 30-35 minutes or until a toothpick inserted into the center comes out clean.
  9. Allow the cake to cool for a few minutes before carefully inverting it onto a serving plate.
  10. Serve warm, and relish every bite!

Notes

For an enhanced experience, serve with whipped cream or vanilla ice cream. This cake actually tastes better after sitting for a day.
