Description

Delicious peanut butter sandwich cookies that bring back cheerful memories of childhood.


Ingredients

  • 3/4 cup creamy peanut butter
  • 1/4 cup unsalted butter, at room temperature
  • 1 cup packed light brown sugar
  • 1 large egg, at room temperature
  • 1 teaspoon pure vanilla extract
  • 1 cup all-purpose flour
  • 2 tablespoons cornstarch
  • 1/4 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup creamy peanut butter (for filling)
  • 2/3 cup powdered sugar (for filling)
  • 34 tablespoons heavy cream (for filling)
  • 1/2 teaspoon vanilla extract (for filling)


Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Combine the peanut butter and unsalted butter in a mixing bowl, beating until creamy.
  3. Add the light brown sugar, egg, and vanilla extract, mixing well until fully incorporated.
  4. Whisk together the flour, cornstarch, baking soda, and salt in a separate bowl.
  5. Gradually add the dry ingredients to the wet mixture, stirring until just combined.
  6. Scoop tablespoon-sized amounts of dough onto the prepared baking sheet, ensuring they are spaced about 2 inches apart.
  7. Bake in the preheated oven for about 10-12 minutes, or until the edges turn lightly golden.
  8. Let the cookies cool on the sheet for a few minutes before transferring them to a wire rack.
  9. Combine the peanut butter, powdered sugar, heavy cream, and vanilla extract for the filling in a bowl. Mix until smooth and spreadable.
  10. Once the cookies are cool, spread the filling on the flat side of one cookie and place another cookie on top to form a sandwich.

Notes

Store in an airtight container for up to one week. Freeze unfilled cookie sandwiches for up to three months.
