Ingredients
- 3/4 cup creamy peanut butter
- 1/4 cup unsalted butter, at room temperature
- 1 cup packed light brown sugar
- 1 large egg, at room temperature
- 1 teaspoon pure vanilla extract
- 1 cup all-purpose flour
- 2 tablespoons cornstarch
- 1/4 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 cup creamy peanut butter (for filling)
- 2/3 cup powdered sugar (for filling)
- 3 – 4 tablespoons heavy cream (for filling)
- 1/2 teaspoon vanilla extract (for filling)
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Combine the peanut butter and unsalted butter in a mixing bowl, beating until creamy.
- Add the light brown sugar, egg, and vanilla extract, mixing well until fully incorporated.
- Whisk together the flour, cornstarch, baking soda, and salt in a separate bowl.
- Gradually add the dry ingredients to the wet mixture, stirring until just combined.
- Scoop tablespoon-sized amounts of dough onto the prepared baking sheet, ensuring they are spaced about 2 inches apart.
- Bake in the preheated oven for about 10-12 minutes, or until the edges turn lightly golden.
- Let the cookies cool on the sheet for a few minutes before transferring them to a wire rack.
- Combine the peanut butter, powdered sugar, heavy cream, and vanilla extract for the filling in a bowl. Mix until smooth and spreadable.
- Once the cookies are cool, spread the filling on the flat side of one cookie and place another cookie on top to form a sandwich.
Notes
Store in an airtight container for up to one week. Freeze unfilled cookie sandwiches for up to three months.
