Description

A bright, tangy vinaigrette perfect for salads, marinades, or as a dip.

Ingredients

  • 1 cup olive oil (extra-virgin for more flavor)
  • 1/2 cup white wine vinegar (or red wine vinegar)
  • 2 teaspoons dried oregano (or 2 tablespoons fresh, chopped)
  • 1 teaspoon garlic powder (or 1 small garlic clove, minced)
  • 1 teaspoon onion powder (or 1 tablespoon finely minced shallot)
  • 1 teaspoon sugar (or honey/maple syrup)
  • Salt and freshly ground black pepper, to taste
  • 1 teaspoon Dijon mustard (optional)

Instructions

  1. Pour the vinegar into a medium bowl or jar.
  2. Add the sugar, Dijon mustard, dried oregano, garlic powder, onion powder, salt, and black pepper.
  3. Whisk until the sugar dissolves and mustard is evenly distributed.
  4. Slowly pour in the olive oil while whisking constantly to form an emulsion.
  5. Taste and adjust salt, pepper, or sweetness.
  6. Let rest for 15–30 minutes to meld flavors, then shake before using.

Notes

Use room-temperature ingredients for easier emulsification. Can be customized with fresh herbs or different vinegars.
