Description
Light, fluffy homemade honey marshmallows that melt in your mouth—perfect for hot cocoa and desserts.
Ingredients
- 1 cup honey
- 1 cup water
- 2 tablespoons gelatin
- 1 teaspoon vanilla extract
- Pinch of salt
- Powdered sugar (for dusting)
Instructions
- Combine gelatin with 1/2 cup of the water. Let it sit to bloom (about 5-10 minutes).
- In a saucepan, combine honey and the remaining 1/2 cup of water. Heat over medium until it reaches 240°F (soft ball stage).
- Once it reaches the right temperature, remove from heat. Gradually pour the hot honey mixture into the bloomed gelatin while stirring continuously.
- Add vanilla extract and salt. Using an electric mixer, beat the mixture on high for 10-15 minutes until it becomes light and fluffy.
- Pour the marshmallow mixture into a greased and powdered-sugar-dusted pan. Spread it out evenly.
- Allow to sit at room temperature for about 6 hours or overnight to set completely.
- After setting, dust with more powdered sugar, cut into squares, and enjoy!
Notes
Store in an airtight container at room temperature for up to two weeks. For freezing, layer with parchment paper and freeze for up to three months.
