Description

Ingredients

  • 3/4 cup water
  • 1/4 cup bread flour
  • 3 cups + 2 tablespoons bread flour
  • 1/3 cup granulated sugar
  • 1 tablespoon instant yeast
  • 1 1/4 teaspoon fine sea salt
  • 1/2 cup whole milk (room temperature)
  • 1 large egg (room temperature)
  • Tangzhong (from recipe above)
  • 5 tablespoons unsalted butter (room temperature)
  • Neutral oil, for frying (like canola, vegetable, or avocado oil)
  • 3 1/2 cups powdered sugar
  • 1/3 cup + 1 tablespoon hot water
  • 1 teaspoon vanilla paste or extract
  • Pinch of fine sea salt


Instructions

  1. Make the Tangzhong: In a small saucepan, combine 3/4 cup water and 1/4 cup bread flour, whisking until smooth. Cook over low heat until thickened, then transfer to a bowl to cool.
  2. Mix the Dough: In a large bowl, whisk together the 3 cups + 2 tablespoons bread flour, sugar, yeast, and salt. Add the milk, egg, cooled tangzhong, butter, and the flour mixture. Mix until a dough forms.
  3. Knead: Knead the dough on a floured surface for about 5-7 minutes, until smooth.
  4. Place the dough in a lightly greased bowl, cover with a damp cloth, and let it rise in a warm place until doubled, about 1 hour.
  5. Roll out the dough to about 1/2-inch thick. Use a donut cutter to cut out shapes and place them on a parchment-lined baking sheet. Let proof for another 30 minutes.
  6. Heat the oil: In a deep pot, heat the oil over medium heat until it reaches 350°F (175°C).
  7. Fry the Donuts: Carefully add donuts to the hot oil, a few at a time, and fry for about 1-2 minutes on each side until golden brown. Remove with a slotted spoon and drain on paper towels.
  8. Make the Glaze: In a mixing bowl, whisk together the powdered sugar, hot water, vanilla, and salt until smooth.
  9. Dip the warm donuts into the glaze and set on a wire rack. Let the glaze set for a few minutes before indulging.

Notes

Don’t rush the rising times for soft, fluffy donuts. Experiment with flavors like nutmeg or cinnamon in the glaze.
