Ingredients
- 2 cups cooked chicken, shredded
- 4 cups chicken broth
- 1 cup milk
- 2 cups all-purpose flour
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1/4 cup butter, melted
- 1 egg
- 1 cup frozen mixed vegetables (optional)
- Salt and pepper to taste
Instructions
- In a large pot, combine the chicken broth, milk, and shredded chicken. Bring the mixture to a gentle boil.
- In a separate bowl, whisk together the flour, baking powder, and salt.
- In another bowl, beat the egg and mix in the melted butter. Combine this mixture with the dry ingredients until just blended.
- Drop spoonfuls of the dumpling mixture into the boiling broth.
- Cover the pot and let simmer for about 15 minutes, allowing the dumplings to cook through.
- If adding vegetables, stir in the frozen mixed veggies and season with salt and pepper to taste. Serve hot.
Notes
For a lighter version, use low-fat milk and whole wheat flour. Store leftovers in an airtight container for up to 3 days, or freeze for up to 2 months.
