Description

A comforting and satisfying dish combining tender chicken, hearty vegetables, and fluffy dumplings simmered in a rich broth.


Ingredients

  • 2 cups cooked chicken, shredded
  • 4 cups chicken broth
  • 1 cup milk
  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/4 cup butter, melted
  • 1 egg
  • 1 cup frozen mixed vegetables (optional)
  • Salt and pepper to taste


Instructions

  1. In a large pot, combine the chicken broth, milk, and shredded chicken. Bring the mixture to a gentle boil.
  2. In a separate bowl, whisk together the flour, baking powder, and salt.
  3. In another bowl, beat the egg and mix in the melted butter. Combine this mixture with the dry ingredients until just blended.
  4. Drop spoonfuls of the dumpling mixture into the boiling broth.
  5. Cover the pot and let simmer for about 15 minutes, allowing the dumplings to cook through.
  6. If adding vegetables, stir in the frozen mixed veggies and season with salt and pepper to taste. Serve hot.

Notes

For a lighter version, use low-fat milk and whole wheat flour. Store leftovers in an airtight container for up to 3 days, or freeze for up to 2 months.
