A delicious homemade cherry pie bursting with sweet and tangy flavors, perfect for any occasion.
Ingredients
- 2 1/2 cups fresh or frozen cherries
- 1 cup sugar
- 1/4 cup cornstarch
- 1 tablespoon lemon juice
- 1/2 teaspoon vanilla extract
- 1/4 teaspoon salt
- 1 tablespoon butter
- 1 pie crust (store-bought or homemade)
Instructions
- Preheat your oven to 425°F (220°C).
- In a medium saucepan, mix together the cherries, sugar, cornstarch, lemon juice, vanilla extract, and salt. Cook over medium heat, stirring until the mixture thickens.
- Remove from heat and allow the mixture to cool slightly.
- Place one pie crust in a pie dish and pour the cherry filling over it. Dot with butter on top.
- Cover with the second crust. Seal the edges and make slits in the top crust for steam to escape.
- Bake for 45-50 minutes or until the crust is a lovely golden brown.
- Cool before serving to let the filling set.
Notes
For a sharper flavor, add a dash of almond extract to the cherry filling. If you prefer a sweeter pie, adjust the sugar to your taste. Ensure your pie crust is cold before assembling for a perfect flaky texture.
