Description

A delicious homemade cherry pie bursting with sweet and tangy flavors, perfect for any occasion.

Ingredients

  • 2 1/2 cups fresh or frozen cherries
  • 1 cup sugar
  • 1/4 cup cornstarch
  • 1 tablespoon lemon juice
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1 tablespoon butter
  • 1 pie crust (store-bought or homemade)

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. In a medium saucepan, mix together the cherries, sugar, cornstarch, lemon juice, vanilla extract, and salt. Cook over medium heat, stirring until the mixture thickens.
  3. Remove from heat and allow the mixture to cool slightly.
  4. Place one pie crust in a pie dish and pour the cherry filling over it. Dot with butter on top.
  5. Cover with the second crust. Seal the edges and make slits in the top crust for steam to escape.
  6. Bake for 45-50 minutes or until the crust is a lovely golden brown.
  7. Cool before serving to let the filling set.

Notes

For a sharper flavor, add a dash of almond extract to the cherry filling. If you prefer a sweeter pie, adjust the sugar to your taste. Ensure your pie crust is cold before assembling for a perfect flaky texture.
