Description
A comforting and hearty casserole with layers of ground beef, potatoes, carrots, and gooey melted cheese, perfect for a busy weeknight dinner.
Ingredients
- 1 pound lean ground beef
- ½ cup diced yellow onion
- 2 garlic cloves, minced
- 2 tablespoons all-purpose flour
- 1 cup beef broth
- 1 tablespoon dried minced onion flakes
- 1 teaspoon onion powder
- 1 teaspoon garlic powder
- 1 teaspoon Worcestershire sauce
- ½ teaspoon salt
- ¼ teaspoon black pepper
- 3 cups shredded cheddar cheese (divided use)
- 1 cup sour cream
- 3 cups diced russet potatoes (about 3 potatoes)
- 1 cup diced carrots
- 1 tablespoon dried parsley (optional)
Instructions
- Preheat your oven to 400°F.
- In a sauté pan, add the ground beef, diced onion, and minced garlic. Cook over medium heat for 5-7 minutes until the beef is browned and the juices run clear.
- Add 2 tablespoons of flour to the beef mixture and stir for 1 minute.
- Pour in 1 cup of beef broth, 1 tablespoon dried minced onion flakes, 1 teaspoon onion powder, 1 teaspoon garlic powder, 1 teaspoon Worcestershire sauce, ½ teaspoon salt, and ¼ teaspoon black pepper. Stir for another minute.
- Mix in 1 cup of shredded cheddar cheese and 1 cup of sour cream until fully combined and smooth.
- Transfer the meat mixture to a greased baking dish. Add 3 cups of diced russet potatoes and 1 cup of diced carrots. Stir everything together to combine.
- Sprinkle the remaining 2 cups of shredded cheddar cheese on top of the casserole. Cover with aluminum foil and bake for 30-35 minutes, or until the potatoes are fork-tender.
- Once the casserole is baked, remove it from the oven and sprinkle with fresh parsley. Serve hot and enjoy!
Notes
You can add extra vegetables or swap out the meat for turkey or sausage for different variations.
