Instructions
- Whisk the eggs in a bowl with salt and pepper until blended.
- Scramble the eggs in a skillet until just set, then transfer to a plate.
- Heat black beans and cooked poultry in the same skillet until warmed through, then add spinach.
- Combine the scrambled eggs with the filling mixture and adjust seasoning.
