This Heirloom Tomato Tart with Parmesan Crust features vibrant heirloom tomatoes, a flaky crust, and a rich cheese filling, perfect for summer celebrations or cozy dinners.
Ingredients
- 1 1/2 cups all-purpose flour
- 1/2 cup grated Parmesan cheese
- 1/2 cup cold unsalted butter, cubed
- 1/4 cup ice water
- 4-5 heirloom tomatoes, sliced
- 1 cup ricotta cheese
- 1 cup shredded mozzarella cheese
- 1 teaspoon dried oregano
- Salt and pepper to taste
- Fresh basil for garnish
Instructions
- Preheat your oven to 400°F (200°C).
- Combine the flour and grated Parmesan cheese in a mixing bowl. Add the cubed cold butter and mix until the mixture resembles coarse crumbs. Gradually stir in the ice water until the dough holds together.
- Roll out the dough on a floured surface, then transfer it into a tart pan and press it into place. Pre-bake the crust for 10-15 minutes or until it’s lightly golden.
- Mix the ricotta cheese, shredded mozzarella, dried oregano, salt, and pepper in another bowl until well combined. Spread this cheesy mixture evenly over the pre-baked crust.
- Arrange the sliced heirloom tomatoes on top of the cheese layer, creating a beautiful mosaic.
- Bake the tart for another 25-30 minutes, or until the tomatoes are tender and the cheese is bubbling.
- Garnish with fresh basil before serving.
Notes
For added flavor in the crust, mix in a teaspoon of garlic powder or use herb-infused butter.
