Description

This Heirloom Tomato Tart with Parmesan Crust features vibrant heirloom tomatoes, a flaky crust, and a rich cheese filling, perfect for summer celebrations or cozy dinners.


Ingredients

  • 1 1/2 cups all-purpose flour
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup cold unsalted butter, cubed
  • 1/4 cup ice water
  • 4-5 heirloom tomatoes, sliced
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • Fresh basil for garnish


Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Combine the flour and grated Parmesan cheese in a mixing bowl. Add the cubed cold butter and mix until the mixture resembles coarse crumbs. Gradually stir in the ice water until the dough holds together.
  3. Roll out the dough on a floured surface, then transfer it into a tart pan and press it into place. Pre-bake the crust for 10-15 minutes or until it’s lightly golden.
  4. Mix the ricotta cheese, shredded mozzarella, dried oregano, salt, and pepper in another bowl until well combined. Spread this cheesy mixture evenly over the pre-baked crust.
  5. Arrange the sliced heirloom tomatoes on top of the cheese layer, creating a beautiful mosaic.
  6. Bake the tart for another 25-30 minutes, or until the tomatoes are tender and the cheese is bubbling.
  7. Garnish with fresh basil before serving.

Notes

For added flavor in the crust, mix in a teaspoon of garlic powder or use herb-infused butter.
