Description

Ingredients

  • 1 pie crust
  • 2-3 heirloom tomatoes, sliced
  • 200g goat cheese, crumbled (or feta as a substitute)
  • Fresh herbs (such as basil, thyme, or oregano)
  • Salt and pepper, to taste
  • 1 egg, beaten (for egg wash)


Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Roll out the pie crust on a lightly floured surface. Transfer it to a baking sheet lined with parchment paper.
  3. Spread the crumbled goat cheese evenly over the crust, leaving a border around the edges.
  4. Layer the sliced heirloom tomatoes atop the cheese.
  5. Sprinkle fresh herbs, salt, and pepper over the tomatoes.
  6. Fold the edges of the crust over the filling, creating a rustic border.
  7. Brush the folded crust with the beaten egg for a golden finish.
  8. Bake in the preheated oven for 30-40 minutes, or until the crust is golden brown and the tomatoes have softened.
