Ingredients
- 1 pie crust
- 2-3 heirloom tomatoes, sliced
- 200g goat cheese, crumbled (or feta as a substitute)

- Salt and pepper, to taste
- 1 egg, beaten (for egg wash)
Instructions
- Preheat your oven to 375°F (190°C).
- Roll out the pie crust on a lightly floured surface. Transfer it to a baking sheet lined with parchment paper.
- Spread the crumbled goat cheese evenly over the crust, leaving a border around the edges.
- Layer the sliced heirloom tomatoes atop the cheese.
- Sprinkle fresh herbs, salt, and pepper over the tomatoes.
- Fold the edges of the crust over the filling, creating a rustic border.
- Brush the folded crust with the beaten egg for a golden finish.
- Bake in the preheated oven for 30-40 minutes, or until the crust is golden brown and the tomatoes have softened.
- Allow to cool slightly before slicing and serving.
