Description
A rustic, free-form tart that highlights the natural sweetness of heirloom tomatoes, perfect for casual gatherings or weeknight dinners.
Ingredients
- 3-4 medium heirloom tomatoes
- 2 cloves of garlic (minced)
- Fresh thyme (a few sprigs)
- Galette dough (store-bought or homemade)
- ¼ cup of Parmesan cheese (shredded)
- ½ cup of sharp cheddar cheese (shredded)
- Fresh chives (for garnish)
- Fresh basil (for garnish)
- Salt and pepper (to taste)
- Olive oil (for drizzling)
Instructions
- Preheat the oven to 400°F (200°C).
- Roll out the galette dough into a rough circle and transfer it to a parchment-lined baking sheet.
- Slice the heirloom tomatoes and arrange them in the center of the dough, leaving a 2-inch border.
- Sprinkle minced garlic, thyme, salt, and pepper over the tomatoes.
- Distribute the Parmesan and sharp cheddar cheese evenly on top.
- Fold the edges of the dough over the tomatoes, pleating as you go to create a beautiful crust.
- Drizzle olive oil over the folded dough and filling.
- Bake in the preheated oven for 30-35 minutes, or until the crust turns golden brown and the tomatoes are tender.
- Garnish with fresh chives and basil before slicing and serving.
Notes
Can substitute with different cheeses or herbs as per availability. Best served fresh with a salad or as part of a brunch spread.
