Ingredients
- 1 cup wild rice
- 2 chicken breasts, cooked and shredded
- 4 cups chicken broth
- 1 onion, chopped
- 2 carrots, diced
- 2 celery stalks, diced
- 1 tsp dried thyme
- 1 tsp dried rosemary
- Salt and pepper to taste
- 2 cups leafy greens (like spinach or kale)
Instructions
- In a large pot, heat a drizzle of olive oil. Sauté the onion, carrots, and celery until they’re soft.
- Pour in the chicken broth, wild rice, dried thyme, and rosemary. Bring the mixture to a gentle boil.
- Reduce the heat and let it simmer for about 45 minutes, until the wild rice is tender.
- Stir in the cooked chicken and leafy greens, cooking until they’re heated through.
- Season with salt and pepper to taste and ladle it into bowls to serve hot.
Notes
To save time, use rotisserie chicken. A splash of lemon juice before serving brightens the flavors.
