  • 1 onion, chopped

  • 2 celery stalks, diced

  • 1 tsp dried rosemary
  • Salt and pepper to taste
  • 2 cups leafy greens (like spinach or kale)


Instructions

  1. In a large pot, heat a drizzle of olive oil. Sauté the onion, carrots, and celery until they’re soft.
  2. Pour in the chicken broth, wild rice, dried thyme, and rosemary. Bring the mixture to a gentle boil.
  3. Reduce the heat and let it simmer for about 45 minutes, until the wild rice is tender.
  4. Stir in the cooked chicken and leafy greens, cooking until they’re heated through.
  5. Season with salt and pepper to taste and ladle it into bowls to serve hot.

Notes
