Description

A quick and satisfying lasagna made in one skillet, perfect for busy weeknights.


Ingredients

  • 1 lb. lean ground beef (or ground turkey/chicken)
  • 3 tsp. minced garlic
  • 8 oz. dry farfalle pasta (bowtie)
  • 1 (14.5 oz) can diced tomatoes
  • 1 (8 oz) can tomato sauce
  • 2 cups low sodium chicken broth or water
  • 1 1/2 tsp. dried oregano
  • 1 Tbsp. dried onion flakes
  • 1/4 tsp. salt
  • 1/4 tsp. pepper
  • 2/3 cup fat-free cottage cheese
  • 1 cup part-skim mozzarella cheese
  • A sprinkle of Parmesan cheese (optional)


Instructions

  1. In a large skillet, heat a splash of extra virgin olive oil over medium-high heat.
  2. Add the minced garlic and sauté for about one minute until fragrant.
  3. Toss in the lean ground beef, seasoning it with salt, pepper, dried oregano, and onion flakes. Stir and cook until the meat is browned.
  4. Pour in the tomato sauce, diced tomatoes, and chicken broth or water, then add the pasta. Stir until everything is well combined.
  5. Cover with a lid and bring the mixture to a boil. Once boiling, reduce the heat and simmer for 14-15 minutes or until the pasta is tender.
  6. Remove the skillet from heat and stir in the fat-free cottage cheese, then sprinkle the part-skim mozzarella cheese on top.
  7. Cover for 1-2 minutes until the cheese melts. Add fresh chopped basil if desired. Serve and enjoy!

Notes

For added flavor, sauté some chopped onions along with the garlic. Add chopped spinach or zucchini for extra veggies. Allow the noodles to absorb flavors for the best taste.
