A refreshing salad combining succulent shrimp, crunchy cucumbers, and a zesty lime dressing, perfect for summer meals.
Ingredients
- 1 pound peeled and deveined shrimp
- 2 medium cucumbers, diced
- 1 bunch green onions, finely chopped
- A handful of fresh parsley and dill, chopped
- Juice from 1 lime
- ½ cup cream or Greek yogurt
- Salt & pepper to taste
Instructions
- Cook the shrimp until they turn pink and are fully cooked, then set them aside to cool.
- Prep the vegetables by combining diced cucumbers, chopped green onions, and fresh herbs in a large mixing bowl.
- Make the dressing by whisking together cream or Greek yogurt with lime juice, salt, and pepper until smooth.
- Mix the cooked shrimp into the vegetable mixture and pour the dressing over it, tossing gently to coat.
- Chill the salad in the refrigerator for about 30 minutes before serving.
Notes
Serve as a light main dish or vibrant side. Store leftovers in an airtight container for up to two days in the fridge, but avoid freezing.
