Description

A refreshing salad combining succulent shrimp, crunchy cucumbers, and a zesty lime dressing, perfect for summer meals.


Ingredients

  • 1 pound peeled and deveined shrimp
  • 2 medium cucumbers, diced
  • 1 bunch green onions, finely chopped
  • A handful of fresh parsley and dill, chopped
  • Juice from 1 lime
  • ½ cup cream or Greek yogurt
  • Salt & pepper to taste


Instructions

  1. Cook the shrimp until they turn pink and are fully cooked, then set them aside to cool.
  2. Prep the vegetables by combining diced cucumbers, chopped green onions, and fresh herbs in a large mixing bowl.
  3. Make the dressing by whisking together cream or Greek yogurt with lime juice, salt, and pepper until smooth.
  4. Mix the cooked shrimp into the vegetable mixture and pour the dressing over it, tossing gently to coat.
  5. Chill the salad in the refrigerator for about 30 minutes before serving.

Notes

Serve as a light main dish or vibrant side. Store leftovers in an airtight container for up to two days in the fridge, but avoid freezing.
