Description

A refreshing, nutritious pasta salad that combines cooked chicken, pasta, and fresh veggies with a light lemon-olive oil dressing.


Ingredients

  • 2 cups cooked pasta (short shapes like rotini, penne, or bowties)
  • 1 cup cooked chicken, diced
  • 1 cup cherry tomatoes, halved
  • 1 avocado, diced
  • 1/4 cup fresh basil, chopped
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
  • Salt and pepper to taste


Instructions

  1. Combine the salad base: In a large bowl, add the cooked pasta, diced chicken, halved cherry tomatoes, diced avocado, and chopped basil.
  2. Make the dressing: In a small bowl, whisk together the olive oil, lemon juice, salt, and pepper until it looks lightly emulsified.
  3. Dress and toss: Pour the dressing over the pasta mixture. Toss gently until everything is evenly coated, being careful not to mash the avocado.
  4. Serve or chill: Serve right away at room temperature, or refrigerate for 20–30 minutes for a colder, more “picnic-style” pasta salad.
