Description

A comforting and indulgent creamy garlic mushroom pasta that is easy to prepare and perfect for any occasion.


Ingredients

  • 8 ounces fettuccine or preferred pasta
  • 2 cups sliced mushrooms (button or cremini)
  • 4 cloves garlic, minced
  • 1 cup heavy cream
  • ½ cup grated Parmesan cheese (or nutritional yeast)
  • 2 tablespoons olive oil
  • 2 tablespoons fresh parsley, chopped
  • Salt and pepper to taste


Instructions

  1. In a pot of boiling salted water, cook the pasta according to package instructions until al dente. Reserve ½ cup of pasta water and drain the rest.
  2. In a large skillet, heat olive oil over medium heat. Add sliced mushrooms and cook until browned, about 5-7 minutes.
  3. Stir in minced garlic and sauté for an additional 1-2 minutes until fragrant.
  4. Add the drained pasta to the skillet with the mushrooms and garlic. Pour in the heavy cream and reserved pasta water, and mix well.
  5. Stir in grated Parmesan cheese and season with salt and pepper to taste. Cook until the sauce thickens slightly.
  6. Remove from heat, sprinkle with fresh parsley, and serve immediately.

Notes

For a lighter option, substitute heavy cream with half-and-half or coconut milk. Consider adding proteins like chicken or shrimp for more nutrition.
