Ingredients
- 8 ounces fettuccine or preferred pasta
- 2 cups sliced mushrooms (button or cremini)
- 4 cloves garlic, minced
- 1 cup heavy cream
- ½ cup grated Parmesan cheese (or nutritional yeast)
- 2 tablespoons olive oil
- 2 tablespoons fresh parsley, chopped
- Salt and pepper to taste
Instructions
- In a pot of boiling salted water, cook the pasta according to package instructions until al dente. Reserve ½ cup of pasta water and drain the rest.
- In a large skillet, heat olive oil over medium heat. Add sliced mushrooms and cook until browned, about 5-7 minutes.
- Stir in minced garlic and sauté for an additional 1-2 minutes until fragrant.
- Add the drained pasta to the skillet with the mushrooms and garlic. Pour in the heavy cream and reserved pasta water, and mix well.
- Stir in grated Parmesan cheese and season with salt and pepper to taste. Cook until the sauce thickens slightly.
- Remove from heat, sprinkle with fresh parsley, and serve immediately.
Notes
For a lighter option, substitute heavy cream with half-and-half or coconut milk. Consider adding proteins like chicken or shrimp for more nutrition.
