Ingredients
- 8 ounces bowtie pasta
- 1 cup cherry tomatoes, halved
- 1 cup cucumber, diced
- 1/2 cup red onion, thinly sliced
- 1/2 cup bell pepper, diced
- 1/4 cup fresh parsley, chopped
- 1/4 cup olive oil
- 2 tablespoons red wine vinegar
- Salt and pepper to taste
Instructions
- Cook the bowtie pasta according to package instructions. Drain and let cool.
- In a large bowl, combine the cherry tomatoes, cucumber, red onion, bell pepper, and parsley.
- In a small bowl, whisk together the olive oil, red wine vinegar, salt, and pepper.
- Add the cooled pasta to the vegetable mixture and pour the dressing over.
- Toss everything together until well mixed.
