Description

These fluffy banana oatmeal pancakes are gluten-free, naturally sweetened, and perfect for a nutritious breakfast or brunch.


Ingredients

  • 2 ripe bananas
  • 2 eggs
  • 1 cup of oats (gluten-free if desired)
  • Mix-ins and toppings of your choice (like vanilla, cinnamon, berries, or nuts)


Instructions

  1. Preheat a skillet on low heat.
  2. Combine the ripe bananas, eggs, and oats in a blender. Blend on low speed until just mixed; a few lumps are okay.
  3. Grease the skillet lightly with cooking spray, coconut oil, or butter.
  4. Pour about 1/6 of the batter onto the skillet for each pancake.
  5. Allow the pancakes to cook through until bubbles form, then carefully flip them.
  6. Cook the other side until golden brown, then remove from the skillet. Repeat with the remaining batter.
  7. Serve warm, topped with syrup, nut butter, or your favorite toppings.

Notes

For different textures, you can swap oats for almond flour or protein powder.
