Ingredients

  • 4 large eggs
  • 1 cup cooked ham, diced
  • 1 cup shredded cheddar cheese
  • 4 large tortillas (flour)
  • Salt and pepper, to taste
  • Cooking spray or oil
  • Optional toppings: salsa, avocado, sour cream


Instructions

  1. Whisk the eggs in a bowl, season with salt and pepper.
  2. Heat a skillet over medium heat and add oil or cooking spray.
  3. Warm the diced ham in the skillet for 2-3 minutes.
  4. Scramble the eggs into the skillet and cook until desired doneness.
  5. Add the cheddar cheese and stir until melted.
  6. Cool the filling for 2-3 minutes to prevent soggy tortillas.
  7. Assemble by spooning filling onto each tortilla, adding optional toppings.
  8. Wrap the tortillas, folding sides in, and rolling tightly.
