Ingredients
- 2 cups macaroni pasta
- 1 cup roasted red peppers, chopped
- 1/2 cup peppadews, chopped
- 1/2 cup pepperoncini, chopped
- 2 cloves garlic, minced
- 1 cup mayonnaise
- 2 tablespoons mustard
- 1 teaspoon salt
- 1/2 teaspoon pepper
- Optional: 1/4 cup chopped fresh herbs (like parsley or basil)
Instructions
- Cook the macaroni according to the package instructions; drain and set aside.
- In a large bowl, combine chopped roasted red peppers, peppadews, pepperoncini, and minced garlic.
- In a separate bowl, whisk together the mayonnaise, mustard, salt, and pepper to create the dressing.
- Add the cooked macaroni to the vegetable mixture, then pour the dressing over it.
- Stir until everything is well combined.
- Taste and adjust the seasoning as needed. Add fresh herbs if using.
- Chill in the refrigerator for at least 60 minutes before serving to allow flavors to meld.
Notes
Store leftovers in an airtight container in the refrigerator for up to three days. For a lighter dressing, substitute some mayonnaise with Greek yogurt.
