A delightful blend of flavors, these Ground Beef Quesadillas are quick to prepare, making them perfect for weeknight dinners or family brunches.
Ingredients
- 1 lb lean ground beef (80/20 or 90/10 blend)
- 2 tbsp tomato paste
- 1/4 cup beef broth
- 1 tbsp taco seasoning
- 4 large flour tortillas (10-inch)
- 1.5 cups bright orange cheddar cheese (freshly grated)
- 1.5 cups white Monterey Jack cheese (freshly grated)
- 1 tbsp vegetable oil (or butter)
- 2 tbsp fresh green cilantro (finely chopped, for garnish)
- 1/2 cup smooth white sour cream (for dipping)
Instructions
- Cook the Beef: In a skillet over medium heat, brown the ground beef. Break it up as it cooks until it’s no longer pink, about 5-7 minutes.
- Mix in Ingredients: Drain excess fat. Stir in tomato paste, beef broth, and taco seasoning. Cook for another 2-3 minutes until the mixture is well combined.
- Assemble Quesadillas: Lay a tortilla on a flat surface. Spread about 1/4 of the beef mixture on half of the tortilla. Sprinkle a mix of both cheeses on top, then fold the tortilla over.
- Toast the Quesadillas: In the same skillet, add vegetable oil over medium heat. Place the folded quesadilla in the pan and cook for about 2-3 minutes on each side until golden brown and the cheese is melted. Repeat with remaining tortillas.
- Garnish and Serve: Cut the quesadillas into wedges and garnish with chopped cilantro. Serve hot with sour cream.
Notes
For best results, use freshly grated cheese. Consider adding toppings like diced tomatoes or jalapeños for extra flavor.
