A complete meal in one bowl combining pasta, ground beef, fresh veggies, and a creamy ranch dressing, perfect for potlucks and meal prep.
Ingredients
- 8 oz pasta (any shape)
- 1 lb ground beef (80/20)
- 1 cup cherry tomatoes, halved
- 1 cup cucumber, diced
- 1/2 cup red onion, diced
- 1 cup shredded cheese (cheddar or your choice)
- 1/2 cup ranch dressing
- Salt and pepper to taste
- Optional: lettuce or greens for serving
Instructions
- Boil the pasta until al dente, then drain and cool.
- Brown the ground beef in a skillet and drain the excess fat.
- Build the salad by combining the cooled pasta, beef, cherry tomatoes, cucumber, red onion, and cheese.
- Dress the salad with ranch dressing and toss until coated.
- Season with salt and pepper to taste.
- Serve on a bed of greens if desired.
Notes
For best flavor, chill salad for 20-30 minutes before serving. Add extra dressing if needed before serving.
